This Petty paring knife is handmade by the artisans of Fukube Kaji. Each blade is carefully forged to ensure sharpness and durability, using high-quality VG10 steel clad between 16 layers of stainless Damascus steel. Corrosion-resistant and long-lasting, it maintains its edge over time and delivers outstanding performance for precision tasks such as peeling, cutting small fruits and vegetables, or handling detailed work.

The blade features a natural pattern created by the crystallization of the metal, paired with a holly-wood handle lacquered using the traditional urushi techniques of nearby Yamanaka. Together, they provide balance, comfort, and water resistance.

Founded in 1908 on the Noto Peninsula, a rural region of Ishikawa Prefecture, Fukube Kaji descends from the tradition of countryside blacksmiths who made and repaired a wide range of everyday tools: knives, farming implements, fishing tools, and forestry equipment used in local life. The workshop’s gourd-shaped logo is inspired by the founder’s nickname, “Hyotan Kaji” (the gourd blacksmith), referencing his habit of always carrying a gourd of alcohol on his belt.
