Hand-forged Santoku knife crafted by the artisans of Fukube Kaji. Each knife is carefully forged to provide a sharp, durable blade, made from high-quality VG10 steel sandwiched between 16 layers of stainless Damascus steel. Corrosion-resistant, it maintains its edge for longer and delivers exceptional cutting performance on all types of ingredients: meat, fish, vegetables, or herbs.

The blade features a natural moiré pattern formed through metal crystallization, combined with a keyaki wood handle lacquered using the traditional Yamanaka-nuri technique from the same region, offering comfort and water resistance.

Founded in 1908 on the Noto Peninsula, a rural area of Ishikawa Prefecture, Fukube Kaji descends from the tradition of rural blacksmiths who produced and repaired a wide range of everyday tools, including knives, agricultural implements, and fishing and forestry tools used locally. The workshop’s gourd-shaped logo is inspired by the founder’s nickname, “Hyotan Kaji” (the gourd-carrying blacksmith), because he was a heavy drinker who always carried a gourd of sake at his waist.
